As a tribute to the traditional “Edomae” style, our mission is to unlock the ultimate potential of the ingredient itself. While we source top-tier fish from Japan, our focus shifts to technical mastery: utilizing six different aging techniques, precision-balanced Shari (sushi rice), and our signature house-aged soy sauce.

The menu highlights rare, seasonal treasures such as Kumamoto Oyster, Kuromusu, Kinki, Kohada, Aori Ika, Akamutsu, Aka Uni Ichiban and more. Every single piece represents hours of meticulous preparation before it ever reaches to you.
