As a tribute to the traditional “Edomae” style Omakase, our mission is to unlock the ultimate potential of the ingredient itself. While we source top-tier fish from Japan, our focus shifts to technical mastery:

The experience is anchored by our precision-balanced Open-flame prepared Shari (sushi rice) and our signature House-aged soy sauce, designed to harmonize with the complex flavors of the aged fish.

Peak of the Season : The Standard of Rarity

At Taki Omakase, we seek the peak potential of every ingredient. These "Main Characters" of our menu are selected for their rarity and transformed through our signature Edomae methods (Please note that our menu is crafted daily based on the auction results in Japan and seasonal availability; specific ingredients are not guaranteed.):

  • A5 Wagyu: A5 is the highest possible grade of Japanese beef, characterized by extraordinary marbling (BMS 8–12) and a melt-in-your-mouth, buttery texture.
  • Japanese Bluefin Tuna: Prized for its deep crimson color and complex, iron-rich flavor. It is often valued at double the price of standard bluefin due to its superior fat distribution and clean finish.
  • Kinki (Channel Rockfish): Often called the "Red Jewel," this rare deep-sea rockfish (typically found at depths of 0.12 –0.3 miles) from Hokkaido is prized for its extraordinary fat content and velvety, buttery meat.
  • Kohada (Gizzard Shad): The heartbeat of Edomae sushi. Each small fish yields only 1-2 precious fillets; its luxury status stems from the labor-intensive preparation required to master this challenging fish.
  • Akamutsu (Rosy Seabass): A highly prized white fish often exceeding $150 per pound. Its high oil content is best realized when lightly torch-seared to release its deep, smoky sweetness.
  • Ichiban Premium Red Uni: The highest auction-grade Red Sea Urchin. It is celebrated for its deep orange hue, creamy texture, and an intense, lingering sweetness from the sea.
  • Ji-Kinmedai: Our Kinmedai only sourced via traditional line-fishing to ensure the delicate skin and fatty flesh remain pristine. Through aging, its natural oils are concentrated to their most flavorful state.
  • Japanese Crown Melon: One of the limited finale from Shizuoka. Each tree produces only one "Crown" fruit, resulting in a $150 - $200 melon with unparalleled sweetness and a fragrance that defines luxury.
